- 8 oz cream cheese, softened
- 2 oz heavy cream
- 1 teaspoon Stevia Glycerite
- 1 teaspoon (packet) Splenda or other powdered or liquid low carb sweetener
- 1 T lemon juice
- 1 teaspoon of vanilla flavoring (I use Frontier Organic)
Mix all ingredients together and whip to a pudding consistency. Spoon into small serving cups and refrigerate until set.
Note: this is also really good with finely shredded coconut mixed in and sprinkled on top.
