• 8 oz cream cheese, softened
  • 2 oz heavy cream
  • 1 teaspoon Stevia Glycerite
  • 1 teaspoon (packet) Splenda or other powdered or liquid low carb sweetener
  • 1 T lemon juice
  • 1 teaspoon of vanilla flavoring (I use Frontier Organic)

Mix all ingredients together and whip to a pudding consistency.  Spoon into small serving cups and refrigerate until set.

Note: this is also really good with finely shredded coconut mixed in and sprinkled on top.

Entire recipe (4 servings): 1022 calories, 101 grams of fat, 14 carbs, 0 fiber and 18 grams of protein.

Single serving:  256 calories, 25 grams of fat, 3.5 carbs, 0 fiber and 4.5 grams of protein.
