INSTRUCTIONS
1.Whisk flour, cocoa powder, xanthan gum, salt&baking soda. Set aside
2.Cream butter with a mixer. Add in sweetener& beat until mixed
3.Add in egg – mixture will appear slightly ‘broken’
4.With your mixer on low, add in 1/2 of the flour mixture- slowing mixing in the rest
5.Wrap dough in saran wrap & refrigerate for 1hr
6.Roll out the dough between 2 pieces of parchment paper and cutout the rounds
7.Place cookies in the freezer for 15min before baking
8.Bake for 8-12 minutes @350F on a baking tray lined with parchment paper
9.Once cooled melt chocolate&add peppermint extract. Dip cookies into the chocolate using a fork&transfer onto parchment paper until set
